New Recipe


So I am always trying to find new recipes to cook and lately I've been wanting to try new vegetables. Which probably sounds silly since I'm a vegetarian, but growing up my parents didn't cook a lot of vegetables besides corn, carrots, potatoes, mushrooms and broccoli. So I am just now trying different kinds of vegetables such as green peppers, asparagus and most recently eggplant. So when I was at the store the other day, I decided to buy an eggplant. The only eggplant that I've ever eaten was the Eggplant Parmigiana at Olive Garden. Now if anyone else has ever had this then they would know that is 95% breading and 5% eggplant....meaning you can't even taste the eggplant. Since I've never really tried eggplant and I had no idea how to cook it either. I ended up finding this amazing recipe website called, eatingwell.com, that has several eggplant recipes. I decided to try one that is called Eggplant-Cheddar Bake. It was actually really good! I think that this would be an enjoyable and filling meal for vegetarians and non-vegetarians alike. It was simple to make and makes enough for 2 people.
