NCLEX

Well I have finally picked a date to take the NCLEX, the RN licensure exam, I am taking it on June 16 at 8 AM. I can't believe it, I have been dreading this test for 2 years and now it's only 3 weeks away. I really need to find some motivation to study, lately I've been keeping myself busy with wedding things...

New Recipe

So I am always trying to find new recipes to cook and lately I've been wanting to try new vegetables. Which probably sounds silly since I'm a vegetarian, but growing up my parents didn't cook a lot of vegetables besides corn, carrots, potatoes, mushrooms and broccoli. So I am just now trying different kinds of vegetables such as green peppers, asparagus and most recently eggplant. So when I was at the store the other day, I decided to buy an eggplant. The only eggplant that I've ever eaten was the Eggplant Parmigiana at Olive Garden. Now if anyone else has ever had this then they would know that is 95% breading and 5% eggplant....meaning you can't even taste the eggplant. Since I've never really tried eggplant and I had no idea how to cook it either. I ended up finding this amazing recipe website called, eatingwell.com, that has several eggplant recipes. I decided to try one that is called Eggplant-Cheddar Bake. It was actually really good! I think that this would be an enjoyable and filling meal for vegetarians and non-vegetarians alike. It was simple to make and makes enough for 2 people. Graduation Day.

Well I did it, I graduated! I now have my Bachelors degree in nursing! Unfortunately, that does not make me an RN. I still need to take the NCLEX, the RN licensure exam, to make it official. Graduation day went perfectly, Spencer and I picked up Allyson and then we got our class pictures taken at the Park Building on campus. We then had the nursing graduation ceremony at Kingsbury Hall. There were some great speakers and I had a great time!

On Sunday, May 9th, I had a graduation fiesta at my house! There were enchiladas, chips and salsa, cheese dip, crackers and veggies and nachos dulce for dessert!

Today sucks.

Well today wasn't a very good day. I have been really stressed out about finding a job lately and it just doesn't seem to be in the cards for me. I was hoping to work on CVU3 again, the cardiac unit where I used to work. The problem is that it is a IHC hospital and they are only hiring current employees as new nurses. So that counts me out because I quit a few months ago. I have applied for jobs with Iasis, Mountain Star, I've even called around to nursing homes and assisted living facilities...nothing. Not one interview. What's the deal?? I have CNA experience and I'm about to graduate with my Bachelors degree in nursing. I am just so frustrated with the job market right now. :( Then on top of that I was looking for jobs today and my internet wasn't working very well and my phone wasn't working...it wouldn't make calls and if it did the audio would go out and I couldn't hear anyone on the other end. grrrr! Today sucks. Today was suppose to be a happy day, it's my first day of freedom. Ok I'm done complaining for now.

Less than 2 weeks to go

I have less than 2 weeks until graduation and I can't seem to find the motivation to study. All I have left is: 4 tests and 6 discussion posts. But it is SO hard to study when it is warm and sunny outside. Yesterday Spencer and I took the dogs for a nice long walk, worked in the yard, looked at new cars (but didn't buy one) and then went to dinner at the Cheesecake Factory (delicious!) with Tyler and Lindsay. Then today Spencer made me breakfast (wheat pancakes, an egg and an apple!), then we spent a few hours at the dog park with Eric (Presley and Butch loved the dog park), then had a nice evening at home and I made a spinach and rice casserole for dinner. My goal was to study for my psych test today...didn't really happen. I only read over 3 of 7 powerpoint slides. I did somehow find the motivation to write my first discussion post! Only 5 more to go!

I can't believe that I am graduating next Thursday, I have worked so hard for this and it is actually happening! I'm excited for a few graduation get-togethers that I'm going to as well, the first one is with my fellow students at Liberty Park. It's going to be a pot luck, it will be nice to be able to hang out with school friends and not be worried about homework and upcoming assignments. Next is dinner with my family after my graduation ceremony, we're going go to Squatters in SLC. My third celebration is a Fiesta/Graduation Party that I am having at my house for my close friends and family. I'm pretty excited for this one. I bought decorations and am looking forward to decorating the house and making quesadillas, cheese dip, nachos dulce and margaritas!

The end is near

Graduation from the University of Utah's College of Nursing is on May 6th. :) I can't believe it, I am graduating in less than a month! I have been waiting for this for SO long!

New Dress

I am SO excited I bought this super cute dress at Anthropologie today! I love it :)
